8 New Healthy Recipes in my Recipe Book
I’ve been kind of lazy with my exercise and eating habits lately and it shows on the scale. Yesterday was the first day of reeling it back in. Part of that was stocking my weekly menu with some new recipes from my favorite healthy recipes site, Skinny Taste. I thought you might need some inspiration, so I wanted to share my new finds with you.

1. Black Bean Soup
I love soup and I’ve been making a lot of it lately, but if you saw my 10 favorite soups post you probably noticed that the majority of them were not the healthy variety. I love black beans, so I went searching the Skinny Taste site and found a yummy-looking black bean soup recipe.
I’m sure the reason I’ve never fixed it before is because of my kids’ lack of enthusiasm about soup. It’s bubbling away on the stove as I type this post and, if you’re reading this after noon on Tuesday, I’ve probably had my first bowl already. I’ll let you know how it turns out, but I’m rarely disappointed with a Skinny Taste recipe.
2. Baked Spaghetti Squash and Cheese
I’m a fan of spaghetti squash, but all I’ve ever done with it is use it as a pasta replacement when we have spaghetti. I was excited to try the baked spaghetti squash and cheese recipe last night and I was not disappointed. Next time I’ll probably half the recipe because everyone isn’t as crazy about spaghetti squash as I am. I froze the leftovers, though, so I’ll try to remember to let you know if it freezes well.
3. Grilled Chicken with Spinach and Melted Mozzarella
The grilled chicken with spinach and melted mozzarella recipe isn’t a new one, but it’s been a long time since I’ve fixed it. We had it last night and I’m not sure why it’s been so long. Yum!
On a totally unrelated note, mozzarella is one of those words I never can remember how to spell. Do you have words like that?
4. Creamed Spinach
I’m a big fan of spinach, too. I had never had creamed spinach until I went on my weekend retreat with some friends a couple of months ago. Yum! My cousin also makes an incredible spinach casserole, though I’m guessing it’s not the healthy sort. So, the lighted up creamed spinach recipe is on the menu for tonight. I can’t wait to try it!
5. Crock Pot Creamy Tomato Soup
So, we had tomato soup Sunday night. It was really good…and really not healthy. Next time we have tomato soup, I’m going to try Gina’s lighter tomato soup recipe and see how it compares.
6. Breakfast bars
My breakfast of choice is oatmeal with fruit, but some mornings I just want something quick. I’ve got the Skinny Taste recipe for Morning Maple Cranberry Pecan Oat Bars printed for a trial run. I decided to wait until next week to make them since my grocery list was getting long. If they taste as good as they look, though, I’ll be making them often.
7. Cauliflower Tots
I’m also a fan of cauliflower, but we usually eat it roasted. These cauliflower tots look a little more involved, as far as prep goes, than I usually prefer, but I’m still keeping them in mind because they look really good.
8. Grilled Pesto Chicken and Tomato Kebobs
I’m hoping for one of those unseasonably warm days so this grilled chicken recipe doesn’t have to wait until next summer. Did you click over and look at it? It looks incredible. I can’t wait to try it.
In addition to Skinny Taste, there are a couple of other sites I follow for lighter, healthier recipes. Emily Bites is similar to Skinny Taste in that she offers healthier versions of foods that normal people (read: the non-crunchy, non-gourmet type) eat. I also like Skinny Ms. My favorite thing about it is that, in addition to healthy recipes, it offers workout routines.
